This week's recipe is submitted by Rita (Buchness) Stevens. The recipe originated
with Clara Kuehl who was well known for the barbecue-beef sandwiches served in
Kuehl�s Tavern at the south edge of Minonk in the 1940's and 1950's.
Clara Kuehl's barbecue-beef
1 onion - chopped
4 tbsp. vinegar
4 tbsp. Worcestershire sauce
3 tsp. mustard
1 cup chopped celery
4 tbsp. brown sugar
2 cups tomato juice
4 tbsp.. butter
8 tbsp.. lemon juice
1 cup catsup
Saute onion and celery in butter. Add other ingredients. Simmer about one hour. Add sliced, precooked, roast beef. Simmer additional 15 minutes.
