Breakfast casserole

DRY 1 roll of sausage, regular flavor, cooked, crumbled and drained.
10 eggs, lightly beaten
3 c. milk
2 tsp. dry mustard
2 cups shredded cheddar cheese
6 c. cubed bread
1/2 tsp. pepper
1 tsp. salt

optional: 1/2 c. mushrooms, sliced-1 med. tomato, chopped-1/2 c. green onions, sliced

Pre heat oven to 325. In large mixing bowl, combine eggs, milk, mustard and salt. Place half the bread evenly in a buttered 9X13X2 baking dish. Sprinkle with half the pepper, half the cheese, half the sausage and half rest of ingredients. ( including any or all of the optional ingredients) I use them all. Repeat layering using remaining bread. Pour the egg mixture evenly over casserole. Bake un-covered 55 to 60 min. or till eggs are set. Tent with foil if top begins to brown too quickly. Serves 6
