PUMPKIN BARS
2 c.flour
2 t. baking powder
1 t. baking soda
1/4 t. salt
2 t. cinnamon
1/2 t. ginger
1/2 t. nutmeg
2 c. sugar
1 c. oil
4 eggs
1 (16 oz.) can pumpkin
1/2 c. nuts (optional)
Mix all ingredients together in mixer till well blended. Spray jelly roll pan with Pam spray and spread mix into pan. Bake in 350 oven for 20 minutes. Cool, then frost. (2 frosting options)
1. Butter Cream Frosting: 1/4 c. butter or margarine, 2 c. powdered sugar, 1 T. vanilla, 1 T. milk. Cream butter till soft with mixer, add powdered sugar gradually, continuing to cream till blended. Add vanilla and milk, beat until light. Add more milk as necessary. Spread onto bars.
2. Cream Cheese Frosting: 2-3 oz. cream cheese, 5 T. soft butter or margarine, 1 t. milk, 1 t. vanilla, 2 c. powdered sugar. Beat all till creamy, spread onto bars.
