This week's recipe is submitted by Dee Stimpert of Minonk who says that she loves to make these for Valentines Day !!!
My Sweeties Cupcakes2 softened sticks of unsalted butter
2 cups sugar
4 large eggs
1 1/2 cups self-rising flour
1 1/4 cups all-purpose flour
1 cup milk
1 teaspoon vanilla extract ( I use clear vanilla extract )
Preheat oven to 350 degrees. In a large bowl, cream the butter on medium speed with an electric mixer, until smooth. Add the sugar gradually, and beat until fluffy, about three minutes. Add the eggs one at a time, beating well after each one. Combine the flours in a separate bowl, ( very important ) and add in four different parts, alternating with the milk and butter, beating well after each addition. Scoop the batter into lined cupcake pans. Bake for 20 to 25 minutes, or until a cake tester inserted into center of cake comes out clean. Allow to cool for a few hours before icing. Makes 24 cupcakes
Buttercream Frosting -
2 very soft sticks of unsalted butter
Place the butter in a large mixing bowl. Add four cups of the sugar, and then the milk, and then the vanilla. Beat until smooth and creamy. Gradually add the remaining sugar, one cup at a time, until the icing is thick enough to be good spreading consistency. If desired you could add a few drops of food coloring, and mix thoroughly.
