This week's recipe is from the late Sophie Paloumpis and is submitted by her granddaughter Vicki Kupec.
Karathopita (Greek sweet cake)
2 1/2 cups sugar
2 1/2 cups ground walnuts
1 tsp cinnamon
1 lb melted butter
2 1/2 cups zweiback ( found in the babyfood section)
12 eggs
1 tsp nutmeg
Beat eggs separately (whites, then yolks), then combine. Add sugar, butter, zweibeck, nuts and spices.
Bake until brown. 300 degrees. Cut while hot and pour syrup very slowly over it. Let stand
overnight before serving.
Syrup:
2 1/2 cups water
2 1/2 cups sugar
Boil for 5 minutes and then add 2 tbs honey. Add 1 small cinnamon stick while boiling.
