Cinnamon Apple Cake
2 cups all-purpose flour
1/4 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
2 tsps. cinnamon
1/2 cup margarine, softened
1 cup firmly packed brown sugar
4 eggs
1 tsp. vanilla
1/2 cup applesauce
1 cup chopped peeled apples
1/3 cup chopped black walnuts, optional
vegetable cooking spray
For icing:
1/4 cup firmly packed brown sugar
1/2 cup applesauce
1 cup powdered sugar
1/2 tsp. butter flavoring
Combine flour, salt, baking powder, soda and
cinnamon;set aside
In large mixer bowl, beat together margarine
and 1 cup brown sugar, mixing until thoroughly
combined.
Add eggs, one at a time, beating after each
addition. Continue beating on medium-high
speed about two minutes longer or until
light and fluffy.
Stir in vanilla, applesauce, apples and walnuts.
Add flour mixture, stirring until thoroughly combined.
Spread evenly in 9 by 5 by 3 inch loaf pan coated
with cooking spray.
Bake at 350 degrees for about 65 minutes or until
wooden pick inserted near center comes out clean.
Cool 10 minutes and remove from pan. Cool on
wire rack.
For icing, combine brown sugar and applesauce in small
saucepan; cook over medium heat, stirring constantly,
until mixture boils.
Continue cooking and stirring 2 minutes longer.
Remove from heat, stir in powdered sugar and butter
flavoring.
Drizzle over cake. Store cake in covered container.
Makes 8 servings.
