Caramel-Apple cupcakes 
									
								 
							
									
										 
										
1 (18 ounce) package carrot cake mix 
 3 cups chopped, peeled tart apples 
 1 (12ounce) package butterscotch chips 
 1 cup finely chopped pecans 
  Make cake batter according to package directions. Fold in apples. 
 Fill 12 grreased or paper-lined jumbo muffin cups 3/4 full. 
 Bake at 350 degrees for 20 minutes or until toothpick comes out clean. 
 In saucepan on very low heat melt butterscotch chips. 
 Spread over cupcakes and sprinkle with chopped pecans.
